• Why does the surface of paste darken?

  During the production, as a result of temperature effect, the green parts of tomatoes become brown and therefore, black spots occur. According to Food, Agriculture and Livestock Ministry regulations, maximum 2 black spots are allowed to be seen in 1 gram tomato paste.

• What should be done in order to extend the life of tomato/pepper paste after opening?

  In order to extend the life of tomato/pepper paste after opening, it is recommended to add a little bit of salt to the paste and place it in a sunny location. After every use, it is suggested to cut any contact between air and paste, this can be achieved by creating an oil layer over the paste,then close the lid and keep the jar or can in refrigerated conditions. In this way, the microbiological and sensory qualities can be maintained.
